I make “Chicken and Noodles” very often when it turns cold out. It is cozy and yummy. It also cures the man cold (LORD HELP US ALL!). It is a recipe from my childhood – every time I make it, the smell reminds me of our little house we grew up in and smelling mom cook it :). I definitely make this when we are battling colds and has become the token meal during those times :).
It is another super easy, not exactly made from scratch recipes. I made it tonight and forgot to take pics – but I wanted to share anyway 🙂 .
Ok! Ingredients below:
Frozen chicken breasts
Salt and Pepper
Chicken broth (a big box of it)
Egg Noodles
Two- three cans of cream of chicken soup
Ok the first thing you need to do is cook the chicken. You can boil it for a long time in broth and salt and pepper, cook it all day in the crockpot, or make it in your Instant Pot. Whatever is easiest for you. You just want to make it not too dry and make sure you put enough salt and pepper on – bland chicken is gross. When it is done cooking, either shred it or chop it up – depends on how you like your chicken in soup. Set is aside.
Boil your noodles – I usually do it in chicken broth and add water. Once they are done – DO NOT DRAIN. Add your cream of chicken soup. Depending on how thick you want it and how much water/broth you used, will make a difference. Then add your chicken to the soup. Let it simmer for a bit to thicken up. Taste and see if you need more salt and pepper – I like to add lots of black pepper. I also a cube of chicken seasoning sometimes. Now let it simmer for awhile – you can go ahead and serve, but this is definitely one of those dishes that get better with time. It is great to save for leftovers and even better the next day. Super easy and cheap – my kind of meal :). You can serve alone in mugs or bowls – it is great with green beans and biscuits or rolls. That’s it y’all!
