Ok let me tell you something about your girl RB – I like to cook, but it has to be easy. For real. I don’t do the super long recipes with a dozen steps and if the ingredient list is long – FORGET IT! So I have collected quite the stash of simple, short ingredient list recipes that I want to start sharing with y’all. Because I am all about the traditions of freaking everything 😉 – almost all of them have a meaning or memory attached to it HA! So today – I am sharing my traditional Halloween night recipe that is easy and everyone loves – it never fails me!
SUPER EASY, NOT EXACTLY ORGANIC :), RB’S HALLOWEEN WHITE CHICKEN CHILI!

This is so freaking easy and super tasty – here is the ingredient list:
Precooked fajita chicken (find it in the deli aisle or frozen)
Can of corn (drained)
Can of white beans of your choice
Chicken broth (at least a can, more broth if you like it thinner)
Packet of White Chicken Chili seasoning ( I use McCormick, if you like spicy -use two packets)
Ok you ready? Dump all of this in a pot and heat it through. The longer it cooks/simmers, the better. I have made it on the stove and in a crockpot -both times great. I have also made it last minute and only allowed it to cook until it was hot and it was still great. We eat it over fritos and top with shredded cheddar and sour cream – yum! Again, not the best pic, but it makes my mouth water HA!
So this year Halloween is in the middle of the week and pretty much the worse timing right? Well check dinner off your list and try this – you won’t regret it! Please tag me if you do – it will make my night!
